DOC Piave

According to the most widely accepted version, Chardonnay originated in Burgundy. We, however, like to tell this story – once upon a time, the hills of Jerusalem were covered with this vine and from the Hebrew name of the city, ‘Shahar Adonay’, came the term Chardonnay. At the Baite, we make wine in a single variety and leave it to refine itself for 8 months in its yeast. The result is a warm, embracing wine that we love to pair especially with risotto.

Name: Chardonnay – Piave DOC.
Production: Organic wine – Certificate IT BIO 004. Vegan wine.
Grapes: 100% Chardonnay.
Production area: City of Mansuè, locality Basalghelle.
Soil Type: Clay-Calcareous of alluvial origin.
Harvest: In the cooler hours of the day, in late August early September.
Vilification and refinement: The grapes, harvest and selected by hand, are destemmed and softly pressed. After a slow alcoholic fermentation (the temperature is controlled), the wine refined in touch with its yeasts, for 7/8 months.
Colour: Pale yellow, with green reflections.
Smell profile: Nose: Fragrance of flowers, and aromas of ripe fruits, of apple. Aroma of butter. In the mouth it’s dry and sapid, with good alcohol. It’s a fine, elegant and balanced wine.
Food pairing: Low-fat white meat, cheese, baked pasta (without red meat), vegetable rice, or fish rise.
Alcohol: 12,5% vol. at bottling.
Service Temp.: 10-12°C.
Production: Less then 3.000 bottles in a year.
Bottle: 750 ml.
Box: 6 bottles.
