Sparkling wine Brut Rosé

Made from the local Raboso vine, this sparkling rosé wine has a delicate but brilliant colour and fragrance of flowers and ripe red fruit. The vigorous acidity typical of Raboso wine is recognisable on the palate, and is skilfully balanced by the softness and persistent central palate that lengthens with notes of blackberry and a morello cherry finish.

Name: “Idem” Sparkling wine Brut rosè.
Production: Organic wine – Certificate IT BIO 004. Vegan wine.
Grapes: 100% Raboso (Indigenous grape variety).
Production area: City of Mansuè, locality Basalghelle.
Soil Type: Clay-Calcareous of alluvial origin.
Harvest: In the cooler hours of the day, in the first ten days of October.
Vilification and refinement: The grapes, harvest and selected by hand, immediately softly pressed, are vilified in white. After malolactic fermentation (the temperature is controlled) in steel containers, re-fermentation follows, and then it refines in autoclave, about for 3 months. Tank “Martinotti Charmat” method.
Colour: Soft punk colour, golden shades. The bubbles are elegant and persistent.
Smell profile: Nose: fragrance of flowers and fruits, blue raspberry and morello cherry. In the mouth, it’s dry, fresh and bubbly. The acidity is its characteristic, it gives to wine persistence and it invites you to drink again.
Food pairing: And it’s excellent as aperitif, but with all dishes of the meal too. Fish appetizers, simple first courses and grilled meats.
Alcohol: 12% vol. at bottling.
Residual sugar: 7-10 gr/liter.
Service Temp.: 4°C.
Production: Limited production, less then 3000 bottles in a year.
